Locally sourced mushrooms from Enchanted Mushrooom Farms in Albuquerque, NM top an extra virgin olive oil base.  Blue and orange oyster mushrooms along with portabello's are prepared in an umami sauce and then carried along with fresh oak coal roasted spring onions.  Held together with mozzarella cheese and finished with freshly shaved parmesan cheese.
